Notice that black's knight is immune from capture because of the threat of Rg6 which pins the queen to white's king!

That, and the poosition dominating position that Morphy has built are the two primary reasons white resigned in this position.

Oh, one last thing. Notice that Morphy was using the Philador defence which, by today's standards is rarely seen because it is such a passive opening that probably is refuted at grandmaster levels, but in Morphy's days was a common defence often used by black.
