My personal favourites are as white:
Against E5:
e4 e5
d4 exd4
nf3 nc6
c3 dxc3
bc4 cxb2
bxb2 (Leads to a very tactical middlegame which can be very dangerous and hard for black to defend)

against c5:
e4 c5
d4 cxd4
c3 dxc3
nf3 (Leads to many possible opening traps and a very solid game if continued correctly)

against e6:
e4 e6
d4 d5
exd5 exd5
nf3 (with the idea of c4. this takes french players out of book and leads to open game which often they are not comfortable in)
