e5 is an interesting idea, and a great practical try. It is exactly the sort of move Black wouldn't like to have to work out.
After 1.e5 dxe5 2.fxe5 Nxe5 3.Rxe5 dxe5 4.Qxe5, there is mate on c7 threatened.
So after a quick calculation of this line, Black would have to start working on other defences like 1..dxe5 2.fxe5 Ng5, or 1..Nd8 etc but having to work out defences is never a good thing.
The desire to open files for attacking rooks is generally a good plan.
